Although I will try to keep this post as general as possible, I do use a reseller of godaddy and cPanel but it might lean toward these systems.

I suggest getting a domain strictly for the purpose of nameservers but you can still host a site on them.

Make sure If you are using a dedicated server you can request additional IP addresses by simply logging in to your account, look at the left where it says
Servers" and hit the link.  On the next page you can add the IP by simply hitting "add IP address".  This method allows 2 more specifically for nameservers reaching a total of 3, one for the cPanel and one for each of your nameservers.  If you need more, add a ticket and they are usually added within an hour.

Log in to your account and bring up the domain, for godaddy or their affiliates you will go to domains/click on the domain name that you want (no need to select it just click the link on the name)

There should be a Host Summary somewhere, on my system its at the bottom left.
Standard is to add 2 nameservers with IP addresses so enter the first as "NS1" the dot your domain dot com is filled in already, then repeat for NS2 with a second IP address.

The last step, of course is to change the domain (s) to the nameservers you just made.

Hope this helps, I would be interested in hearing how the different registrars handle this.
